Did you know that you can carbonate fruit to make a fizzy, refreshing and unique gastronomic treat? Great as a starter or palette cleanser in between courses.

Making carbonated fizzy fruit is a quick and simple process but will impress your dinner party guests to no end. All you need is a selection of fruit, a cream dispenser or soda siphon and CO2 chargers. It is important to check that you have the right chargers - Carbon dioxide (CO2) and NOT nitrous oxide (N2O) chargers as N2O cream chargers will not make the fruit fizzy but will give it a funny taste.

You will need:
  • A selection of fruit, cut into bit sized pieces (as if you were making a fruit salad) Apples, oranges, kiwi fruit, pineapple and grapes work well, however, strawberries don't taste as great.
  • A cream dispenser/whipper or soda siphon
  • Carbon dioxide (CO2) charger

Method:
  • Cut your fruit into bite sized pieces, grapes need to be cut in half as they often explode due to pressure in the siphon.
  • Place the fruit into your siphon and charge it with CO2. You can place the siphon in the fridge overnight to increase the amount of CO2 in the fruit 
  • Release the pressure in the siphon before unscrewing the top and serving your now fizzy fruit.
  • Note that the fruit needs to be eaten within 15 minutes of being released from the siphon, otherwise it will lose its 'fizz'.

Whether you're lactose-intolerant, allergic to dairy, vegan, following a paleo diet or simply trying to be a little bit healthier, you probably think that creamy treats, ice-creams and desserts are a no-no. Think again.

It is possible to whip up a dairy-free, paleo-friendly, all-round healthier alternative to whipped cream more quickly and easily than you think using a few simple ingredients: coconut cream/milk, a cream dispenser and cream chargers.

You will need:
1 can of full-fat, unsweetened coconut cream (ideally without preservatives or gums)
A 1L cream dispenser/whipper with N2O charger
A sweetener of your choice, i.e. sugar, stevia, maple syrup to taste

Method:
1. Whisk the coconut cream, along with your sweetener and flavouring (if used) and place in the fridge until well chilled.
2. Pour the mixture into your cream dispenser and follow the instructions to charge.

It's as simple as that! You can easily add flavourings such as vanilla to your whipped coconut cream or simply leave it as it is, as alone it is incredibly rich and creamy - just like the real thing!

Delicious Old Fashioned Whipped Cream

1 cup regular Whipping Cream
1 teaspoon Vanilla (or to taste)
3 tablespoons powdered sugar (or to taste)
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake.



Chocolate Flavoured Whipped Cream

1 cup Regular Whipping Cream
3 tablespoons powdered sugar
2 tablespoons rich chocolate milk powder (Nestles or Hershey’s are both fine)
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake.

Amaretto Flavoured Whipped Cream

1 cup regular Whipping Cream
2 tablespoons Amaretto
3 tablespoons powdered sugar (or to taste)
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake

Low Carb “Atkins Diet” Whip Cream

1 cup Regular Whipping Cream
3 teaspoons (or to taste) Splenda or other Sugar Substitute
1 teaspoon Vanilla
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake.

Patty’s Rum Cream Coffee Topping

1 cup Regular Whipping Cream
3 tablespoons Rum
3 tablespoons Kahua Coffee liqueur
3 tablespoons powdered sugar
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake. Dispense on top of coffee.

Leslie’s Hazelnut Cream Coffee Topping

1 cup Regular Whipping Cream
3 tablespoons Frangelico Hazelnut liqueur
3 tablespoons Kahluha Coffee liqueur
3 tablespoons powdered sugar
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake. Dispense on top of coffee.


Amaretto Vienna Coffee Topping

1 cup Regular Whipping Cream
6 tablespoons Amaretto
3 tablespoons powdered sugar
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake. Dispense on top of coffee.
You can experiment with any number of different liqueurs or to create some of the most wonderful and delicious whipped and frothy coffee toppings you can imagine!

Michele’s Vanilla Yogurt Dream

1/2 cup plain yogurt
1/2 cup Regular Whipping Cream
3 tablespoons powdered sugar (or to taste)
3 teaspoons of Bourbon Vanilla
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake. Use with bananas, berries, or your favourite fruit

Jimmy’s Chocolate Mousse

1 cup Regular Whipping Cream
1 teaspoon instant coffee
5 tablespoons instant cocoa
1-2 tablespoons Cognac or Brandy
3 tablespoons powdered sugar
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake.

Rachel’s Tiramisu

2 egg yolks
1 cup Regular Whipped Cream
3 tablespoons powdered sugar
1 teaspoon Amaretto
Thoroughly mix together ingredients in dispenser. Replace cap, charge with one cylinder and shake. Dispense on lady finger cookies layered and sprinkle with cocoa powder and instant coffee. Enjoy!
